Galician quail dish wins Lviv regional food contest
Students from 27 vocational schools explored recipes preserved in local families. Olga Bas took first place with a modern presentation of a traditional Galician dish.
Olga Bas of the Lviv Vocational College of Hotel, Tourism and Restaurant Service won the Authentic Dishes of Ukraine competition in the Lviv region. Her entry, a noble-style quail stuffed in the Galician tradition, topped a field representing 27 vocational education institutions.
The Telegram channel @people_of_action reported the results on Saturday, November 7. Contestants researched old family recipes from their communities before adapting them with contemporary cooking methods.
Second place was shared by Solomiia Bzdel, who presented a Galician rolled dish with cherry glaze, and Anastasiia Komarnytska, author of the Boyko Taistra entry. Hanna Martyniuk, Stepan Voitovych and Daniil Bykalovych shared third place with three separate regional creations.
Historical research formed a central part of the contest. One entry, Zaterta Kapusta, preserved a recipe linked to Ivanky, a village burned by Soviet troops in 1944. According to the announcement, the participants’ recipes were due to appear on the website of the Lviv region’s vocational education training and methodology center, while the winners were expected to represent the region at an interregional stage.
